The Caves & Cliffs update transformed Minecraft's world generation with deeper caves, taller mountains, lush caves, dripstone caves, and noise caves.

Released in two parts, 1.17 in June 2021 adding copper, amethyst, axolotls, and glow squids; 1.18 in November 2021 completing the height/depth expansion.
